Um... You're not implying that it's hard to do, are you? A simple metal bar is enough to take down an armored guy, so...

a poor fellow suddenly running around in the finest armor, possibly even personalized with coats of arms etc., raises a lot of suspicion, don´t you think?
But what would indicate that our character is poor, especially while wearing a full plate armor? Also, let's assume we managed to:
  • lure an armored person to some secluded area,
  • kill him,
  • hide his body well.
This way we can not only not raise any suspicions, but also impersonate said man for a good amount of time.

Also, when things are getting ugly, we can always think ahead and take the armor off, putting it back in our inventory.

Huh... Great plan except one moment... how do you know who is this guy? What rank he's or what the hell he doing there?
Or you'll pretend you have amnesia? Sweet.

That's the point. We'll be able to impersonate someone right until people start asking us inconvenient questions, just like the ones you mentioned. But before that happens, we should be able to - for example - get to some restricted areas through guarded passages, where no restrictive authorization is needed.

I see - that's how it was in KS video, when charactress dressed herself as castle's guard and walk through the main gate. IMHO there's some kind of caution/suspection-meter needed, or any replicas of other guards "'Sup, Helmut! ... [after 3-5 seconds or ignoring] ... Err, Helmut, are you OK? ... [~2-4 sec] ... Hey you! Stop! Drop your weapons now! ... [~1-2 sec] ... Guards, take him!"
Also some emotions or gestures could be useful to interact with NPC's (as in example above you could simply nod or thumbs up to guard and step through without any suspection) but it'll be too hard for common players (pity...).

You could simply apply logic to the situation. What reason would there be for knight to just stroll around in full armor alone? Armor, especially something like plate, is only worn when you´re about to battle. There is hardly a reason someone just rolls around in his shiny armor in a remote place alone. And even if he did and you somehow manage to take down that person, a poor fellow suddenly running around in the finest armor, possibly even personalized with coats of arms etc., raises a lot of suspicion, don´t you think? Especially when a noble who owned a very similar piece suddenly went missing... and that is, if the armor even fits you at all.

Given the rules SG is supposed to uphold, I don´t think armor theft is going to be a bigger problem in the game than it was in the real world.
Probably not unless they change how hard it is to fight different tipes of enemies well knights normally had a 21 year training so they where pretty much ready for whatever tipe of attack you was going to do no matter what weapon you will try to use
 
Well in the real world people were really frightened of knights and what not, that's probably why armor theft wasn't really a thing, in Sui Generis you will be basically playing a fearless sociopath that is mentally capable of attacking a knight in full plate armor with only his fists.
Well, in this game we also need to keep social order and our own character in line. It's not just open world = GTA KILL ERRYONE HIDE IN CORNER EVERYTHINGS FINE. The world will remember that naked sociopath and eventually you'll have such a large bounty on your head, you'll never be able to live for long

I would like it to be not like stairway (skyrim) where your gear progression is linear (after leveling a bit you start getting better gear, when you get that gear you start finding better and better and so on)...that's stupid and boring there should be some items that are hard or impossible to find, only obtainable by stealing highly rich people or killing that knight or asking a highly skilled blacksmith to craft it for a high price.

in morrowind glass gear was very valuable and you could get some pieces in a few locations
in skyrim after some point bandits assaults you and they have glass armor like it's just a damn pijama, oblivion was worse
